Banana-bread Donuts

Donut shape rules! This will be my St.Valentine special for you and my people at home. Super easy vegan banana bread recipe. First run as gluten-free, super successful. I never get to the topping moment, they are gone in no time. Finally, having fun and experiment with toppings on the last five donuts that survived the night. As always gluten-free, vegan and no refined sugar.

Recipe ingredients
(for twelve servings)

3 ripe bananas
100 g apple puree
50ml coconut oil
100g coconut sugar or muscovado
180g oat flour (making mine from oat flakes)
60g gluten-free oat flakes
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp sea salt handful of nuts (almonds and walnuts) and choc chip

Toppings are fun! Feel free to experiment. I couldn’t resist making these flavors:
– white chocolate (mixed with maple syrup and coconut oil) and cinnamon
– dark chocolate and pistachio
– maple syrup, coconut sugar, and cinnamon
– Dark & white choc chip and salt flakes


How to make it

Preheat oven to 180°C. Place bananas, apples, coconut oil and sugar in a food processor and blend. In a separate bowl mix all dry ingredients. Add them to the food processor and pulse until well mixed. Add extras: nuts and choc chips by choice. Use coconut oil to grease that donut shaped tray. Bake for 35-40 minutes. The best is to check with a wooden stick. If it’s dry – donuts are ready. Allow cooling for a few hours.
Decorate. Play.
