30 Sep Double Chocolate Orange Cake
Chocolate Orange cake with Coconut cream on top. It’s a classic for my girls’ birthdays. I’ve made this cake for the last six-seven years. It’s a winner, we still can’t get enough of it!
(for one cake)
400 grams of all purpose flour
400 g of fine brown sugar (dark or coconut)
50g cocoa powder
50g chocolate chips/ chunks
1 teaspoons of baking soda
1 teaspoon of baking powder
1 Tbsp chia seeds, grounded
1 teaspoons of apple vinegar
1/2 teaspoon of salt
300 ml fresh orange juice
200 ml of coconut/sunflower oil
200 ml of rice milk (any other plant-based milk is fine to use)
a pinch of vanilla
peel of 1 orange
Preheat the oven to 180° C. place baking paper on a tray.
Mix all dry ingredients in a bowl: the flour, sugar, baking soda, cocoa, and salt.
In another bowl mix the liquids and chia seeds: oil, vanilla, orange peel, orange juice, rice milk, and vinegar.
Add liquid bowl to the bowl with dry ingredients.
Mix everything well. Pour into the prepared form and smooth.
Bake in the preheated oven for 45 minutes. Once removed from the oven, leave it for 10 minutes in the tray. Remove and allow to cool completely.
